Ingredients

  • 1 3- to 4-lb. pork shoulder (boston butt), trimmed of excess fat
  • Made In Idaho Crispy Potato Puffs

Pulled Pork Sauce Ingredients:

  • 1 onion chopped
  • 1 cup ketchup
  • 2 tbsp. tomato paste
  • 1/3 cup apple cider vinegar
  • 1/2 tsp. paprika
  • 1 tsp. garlic powder
  • 1 tsp. oriental mustard powder
  • 1/2 tsp. cumin

Toppings For Totchos:

  • 1/4 cup Green Onions
  • 1 avocado
  • 1 fresh jalapeno
  • 1/4 cup cilantro
  • 1 can black beans
  • 1/4 cup of Mexican Blended Cheese

Instructions

  1. Trim all excess fat off of the pork.

  2. Combine all “Pulled Pork Sauce” ingredients into the Crock Pot, stir well.
  3. Put Trimmed pork into Crock Pot and cook on Low for 8-10 hours. Pork is done when the internal temp is 190 degrees.
  4. Remove Pork. Shred with a two forks and put into bowl. Then pour the sauce from the crock pot into the pork.
  5. Cook Made In Idaho Crispy Potato Puffs according to instructions on bag.
  6. Top Crispy Potato Puffs with pulled pork, cheese, green onions, black beans, and jalapenos.
  7. Put the fresh, sliced avocado and cilantro on top.
