Air Fryer Eggplant Parmesan

This Air Fryer Eggplant Parmesan is a healthy meal that is ready in just minutes. Crispy on the outside, soft and creamy inside, it's cooked entirely in your Air Fryer with very little oil for a nutritious, vegetarian recipe that everyone will love, even your meat eaters!

Ingredients

  • 1/2 cup Italian style bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/4 teaspoon ground pepper
  • 1/2 cup flour
  • 2 eggs
  • 1 eggplant cut into 1/2" rounds
  • 2 cups pasta sauce
  • 8 slices mozzarella cheese
  • chopped fresh parsley optional for garnish

Instructions

  1. Add bread crumbs, cheese, seasoning, salt, garlic powder and pepper in a shallow bowl and mix well. In a separate shallow bowl, add flour. In a third shallow bowl, beat two eggs.

  2. Cut Eggplant into thick slices.
    Slice eggplant parmesan into thick slices
  3. Dredge eggplant in flour, coating both sides, coat in egg and follow with bread crumbs, coating both sides.
    Dip in flour, egg and then breading.
  4. Preheat air fryer to 370 for 5 minutes. Coat basket with nonstick cooking spray and place eggplant in basket. Heat for 8 minutes, flipping halfway through cooking.

  5. Top with a large dollop of sauce and slice of mozzarella cheese. Heat for 1 minute or until cheese is melted.

  6. Sprinkle with chopped fresh parsley if desired and serve immediately.
