Instant Pot Red Beans and Rice

I am loving this easy recipe for Instant Pot Red Beans and Rice.  This recipe is perfect for entertaining guests or just for dinner tonight.  Don't worry, if there are leftovers, they taste just as great reheated the next day.

  • Ingredients:
  • 1 onion diced
  • 1 bell pepper diced
  • 3 celery stalks diced
  • 3 garlic cloves minced
  • 1 lb dry red kidney beans
  • 1 tsp salt or more to taste
  • 1/2 tsp black pepper
  • 1 tsp hot sauce
  • 1 tsp fresh thyme or ½ tsp dried thyme
  • 2 bay leaves
  • 7 C water
  • 1 lb Cajun sausage thinly sliced
  • 10 C cooked rice


  1. Add ingredients (except for sausage and rice to the Instant Pot).
  2. Place the lid on.
  3. Lock the lid.
  4. Set to manual high pressure (for 28 minutes)
  5. At 28 minutes, use the quick release method (release the valve).
  6. Wait until the pin falls.
  7. Remove the lid.
  8. Run the lid under cold water.
  9. Set aside.
  10. Add sausage.
  11. Put the lid on, locking it.
  12. On manual setting set for 15 minutes high pressure,
  13. Allow the Instant Pot to release naturally this time.
  14. This may take as long as 26 minutes for the pin to drop on its own.
  15. Allow this to sit with the lid off to thicken the broth.
  16. Serve over cooked rice
