Chicken S Chicken Sandwich with Garlic and Beer Marinade

This delicious Chicken Sandwich is made with a Garlic and Beer Marinade and cooked on the grill in a foil pack. Using Yuengling Traditional Lager for the marinade, this tasty creation is the perfect meal to tailgate with before a show or a big game!

Ingredients

  • 12 ounces of Yuengling Traditional Lager
  • 6 Boneless Skinless Chicken thighs
  • 1/4 cup Onion chopped
  • Red Bell Pepper sliced
  • Yellow Bell Pepper sliced
  • 2 Tbsp Olive Oil
  • 4 cloves of garlic diced
  • 1/2 tsp cayenne pepper
  • 1/2 cup of colby jack cheese
  • 6 Hawaiian Sweet Rolls

Instructions

  1. Mix together the olive oil, Yuengling Beer, Garlic, Onion and Cayenne
  2. Marinade the chicken for at least 4 hours.
  3. Brush a small amount of cooking oil on a 12" X 12" square of aluminum foil.
  4. Place the chicken on the foil and top with the red and yellow pepper.
  5. Place on grill and cook for 12 minutes. To ensure thorough cooking, you can take one off and carefully unwrap it to take the temperature. It should be 165 degrees.
  6. Once the chicken is cooked sprinkle some cheese into each packet to let it melt.
  7. Place them on the Hawaiian Sweet Rolls and enjoy!

Recipe Notes

As mentioned above, you can just put the chicken on a plate if you are trying to avoid the bread. Or, if you want a "walking" version of this recipe, just eat it straight out of the foil after you let it cool down a bit!
