This delicious Chicken Sandwich is made with a Garlic and Beer Marinade and cooked on the grill in a foil pack. Using Yuengling Traditional Lager for the marinade, this tasty creation is the perfect meal to tailgate with before a show or a big game!
I am a huge fan of both music and sports. Not only do I love watching both of them, I love playing them too. In fact, I’ve been in a local bands for the past 25 years. There is nothing more fun than creating music with friends while drinking some cold beer! But, seeing live music with friends and family is something I love to do as well. The music, the fans, the food and the atmosphere can’t be beat. One of the coolest parts of going to a concert or musical festival isn’t even the music. It is all the camaraderie of the fellow fans enjoying each others company and tailgating before the show.
I’ve tailgated a couple of times myself and it is the perfect opportunity to have some really great food! Tailgating food options can go WAY beyond brats, dogs and burgers. There are lots of great creations that are perfect to enjoy on your portable grill out in the parking lot before the first set starts. Today, I’d love to share a recipe with you that I think would be perfect for just such an occasion: Foil Pack Chicken Sandwiches with Garlic and Beer Marinade.
Foil Packs: The Perfect Tailgating Tool
I’ve really been into foil pack grill recipes lately. What is a foil pack? It is a recipe where you simply wrap all the ingredients into a square piece of aluminum foil. Then, just throw them on the grill! You can do this with just about any combination of ingredients. The great thing about foil packs is that you can make them ahead of time at home, throw them in a cooler, and then just toss them on the grill when you get set up out in the parking lot. From there, you can make them into a sandwich, pour the contents onto a plate or even eat them out of the foil!
Garlic and Beer Marinade
This garlic and beer marinade is one of the key factors to this recipe. It is super simple to make. Simply mix together the olive oil, garlic, chopped onions and cayenne pepper with a 12 oz bottle of beer. Let the chicken sit in the marinade for at least 4 hours (I try to do mine overnight). The most important step to this process is to use the right beer. For marinades, I love to use Yuengling Traditional Lager.
Yuengling Brewery
I take my beer pretty seriously. I home brew my own homebrew recipes and am currently on a quest to drink 100 different beers brewed in my home state during the calendar year. So, I feel like I know a lot about beer! Living in the midwest, we weren’t actually able to buy Yuengling beer until a couple of years ago because it wasn’t available in our State. I’d have to have friends or family members bring some back if they traveled into a territory that sold it. So, whenever I see it in the store now, I’m always thankful it is a lot easier to get my hands on these days! They also have a great “beer finder” tool on their webpage. It’s very user-friendly and you can easily see where their beer can be found near you.
I really like Yuengling for a number of reasons. It is one of those beers that can be used in a lot of different settings. It’s not too hoppy like an IPA or too heavy like a Stout or Porter. And, for a lighter lager, it really is full of flavor. It’s perfect to drink after mowing the lawn, playing music with friends, to use as a marinade or at a tailgating party in the parking lot.
I also love the story of Yuengling Brewery. It is America’s Oldest Brewery and has been family owned the whole time, ever since opening in 1829! It is currently run by it’s 6th generation, four daughters that have over 60 years of brewery experience. I think it’s a great story that these four woman are able to lead a company in a male dominated business. Recently, they celebrated their 190th anniversary with a huge party in Yuengling’s hometown of Potsville, PA full of live music, food and fun! Foil Pack Chicken Sandwich with Garlic and Beer Marinade
I’m pretty excited to share this recipe with you because this one is a family favorite. I like to use chicken thighs for my foil pack recipes. The chicken always comes out super tender and moist. And, the longer you let it sit in the Garlic and Beer Marinade, the better it will be!
Ingredients:
- 12 ounces of Yuengling Traditional Lager
- 6 Boneless Skinless Chicken thighs
- 1/4 cup Onion (chopped)
- Red Bell Pepper (sliced)
- Yellow Bell Pepper (sliced)
- 2 Tbsp Olive Oil
- 4 cloves of garlic, diced
- 1/2 tsp cayenne pepper
- 1/2 cup of colby jack cheese
- 6 Hawaiian Sweet Rolls
Instructions
- Mix together the olive oil, Yuengling Traditional Lager, Garlic, Onion and Cayenne
- Marinade the chicken for at least 4 hours.
- Brush a small amount of cooking oil on a 12″ X 12″ square of aluminum foil.
- Place the chicken on the foil and top with the red and yellow pepper.
- Place on grill and cook for 12 minutes. To ensure thorough cooking, you can take one off and carefully unwrap it to take the temperature. It should be 165 degrees.
- Once the chicken is cooked sprinkle some cheese into each packet to let it melt.
- Place them on the Hawaiian Sweet Rolls and enjoy!
As mentioned above, you can just put the chicken on a plate if you are trying to avoid the bread. Or, if you want a “walking” version of this recipe, just eat it straight out of the foil after you let it cool down a bit!
