My wife was born and raised in Boise, Idaho. Although we both settled in the Midwest, all of her family still lives out there and we frequently visit. I’ve come to fall in love with the fresh air, mountains and endless outdoor activities that surround that beautiful state. One other thing that I’ve learned is that they take their potatoes very seriously out there! They love everything that comes from a potato.
What Is A Totcho?
My wife especially loves tater tots! In fact, she considers herself a tater tot conioussier! Any time we are at a restaurant, she always subs her side for tater tots if available. A couple of years ago, she introduced me to one of the greatest inventions ever: the Totcho! What is a Totcho? Just picture nachos and substitute the tortilla chips for tater tots. And just like nachos, you can put just about anything on them! We are starting to see Totchos on the menus of local restaurants around town and I think they are becoming more and more popular.
I’ve also noticed that pulled pork nachos are becoming all the rage. At first, I wasn’t sure about putting pulled pork with a sweet BBQ sauce on nachos. Shouldn’t nachos be spicy? But I tried them a couple years ago and realized how wonderful they are. One of my favorite flavor combinations is sweet and spicy. And sweet BBQ sauce with some fresh jalapenos is actually an outstanding combination. So, it finally occurred to me to combine both of these newer dishes into one and create a Pulled Pork Totchos Recipe.
How Do You Make Totchos?
There are two main ingredients you need to make Pulled Pork Totchos. First, you will need a good pulled pork recipe. Second, you will need some really quality tater tots that will stand up to all the great stuff you are going to load onto them.
As far as the pulled pork goes, I buy about a 4 lb Pork Boston Butt from the store and throw it into the crock pot with a special sauce I’ve made. About 8 hours later, it comes out perfectly. It is SOOO simple. If you are into smoking meats and have your own method, of course that will work, but I don’t have the patience for that. I like to just “set it and forget it” in the slow cooker. Read below for my detailed instructions on making the pulled pork.
Grown In Idaho Crispy Potato Puffs
For this Pulled Pork Totchos Recipe, I knew that I needed a really solid, quality Tater Tot to stand up to all the pork and other ingredients that I will be loading on top of it. Seriously, you don’t want a weak, soggy Tater Tot for this recipe. So, I went with the Grown In Idaho Crispy Potato Puff. I’ve had Made In Idaho products many times before and I knew they would be perfect for my Totchos Recipe.
On our weekly trips to Meijer, we usually make sure to pick up a bag or two of Made In Idaho potato products from Lamb Weston. They have lots of great varieties to choose from, including:
- Grown In Idaho Super Crispy Crinkle Cut Fries
- Grown In Idaho Super Crispy Shoestring Fries
- Grown In Idaho Crispy Potato Puffs
- Grown In Idaho Hand-Cut Style Fries
They are super easy to find in the Frozen Potato section at our local Meijer!
For our dinners, we usually go with the Crinkle Cut Fries. My kids just love the shape of them and they always cook just the way that I love my fries: crispy golden on the outside, full, tender and fluffy on the inside. It’s pure Idaho Potato goodness! Just like my wife remembers as a child! We have also used the Grown In Idaho Thick Cut Hash Browns for my famous “Saturday Morning Breakfast” that I love to cook my family. Obviously, any food tastes better when it is made with real, quality ingredients. These potatoes are grown straight from Idaho Farms right to my family. This is what makes them the gold standard in potatoes and perfect for this Pulled Pork Totchos Recipe.

Loaded Pulled Pork Totchos Recipe
Ingredients:
- 1 (3- to 4-lb.) pork shoulder (boston butt), trimmed of excess fat
- Made In Idaho Crispy Potato Puffs
Pulled Pork Sauce Ingredients:
- 1 onion, chopped
- 1 cup ketchup
- 2 tbsp. tomato paste
- 1/3 cup apple cider vinegar
- 1/2 tsp. paprika
- 1 tsp. garlic powder
- 1 tsp. oriental mustard powder
- 1/2 tsp. cumin
Toppings For Totchos:
- 1/4 cup Green Onions
- 1 avocado
- 1 fresh jalapeno
- 1/4 cup cilantro
- 1 can black beans
- 1/4 cup of Mexican Blended Cheese
Instructions:
- Trip all excess fat off of the pork.
- Combine all “Pulled Pork Sauce” ingredients into the Crock Pot, stir well.
- Put Trimmed pork into Crock Pot and cook on Low for 8-10 hours. Pork is done when the internal temp is 190 degrees.
- Remove Pork. Shred with a two forks and put into bowl. Then pour the sauce from the crock pot into the pork.
- Cook Made In Idaho Crispy Potato Puffs according to instructions on bag.
- Top Crispy Potato Puffs with pulled pork, cheese, green onions, black beans, and jalapenos.
- Put the fresh, sliced avocado and cilantro on top.
What you now have in your hands is a feast for the ages. These would be great to break out next time you have friends or family over for the big game. Or, sometimes I just crave these and absolutely need to make them. They really are super easy to make. I love the combination of crispy potato puffs, rich pulled pork and fresh ingredients on top. There is just so many layers and textures to this dish that really make is something special. I hope you enjoy them.
