Instant Pot Irish Stew:
Although I grew up in an Irish Catholic Family, I don’t remember having many traditional Irish meals as a child. After all, Ireland isn’t necessarily know for their cuisine. But ever since we got our Instant Pot, I have been using it to try out all sorts of new recipes. After doing some research, I created this recipe for an easy Instant Pot Irish Stew with Guinness. It is rich and hearty and perfect for your next family dinner or your next St. Patrick’s Day party!

- bacon
- Stew Meat
- Flour
- Guinness
- Butter
- Beef Stock
- Worcestershire Sauce
- Brown Sugar
- Garlic
- Tomato Paste
- Thyme
- Red Potatoes
- Onion
- Carrots
What Is An Instant Pot?
I’m assuming you’ve heard of an Instant Pot if you have come to this recipe. But in case you haven’t, an Instant Pot is a small electrical kitchen appliance that can cook your food using hot, pressurized air. Since all of the heated air is sealed in an air tight container, the food will cook much more quickly with more consistent results. And, all these delicious juices and aromas can’t escape during the cooking process, so your dishes will come out tender, juicy and full of flavor. Just about anything that can cook in a crock pot, you can also cook in a pressure cooker, only a lot faster! Dishes that take 8-10 hours in the crock pot can be done in 45 minutes with an Instant Pot!
And they can make anything! Even desserts and yogurts!

Instant Pot Irish Stew Recipe:
Before beginning the cooking process, I like to cut up all my vegetables and measure out as many of my ingredients as possible. This makes the everything go a lot smoother. If you know me, then you know I am not great at multi-tasking! So I like to be as prepared as possible!
You can also sub out the Guinness for another dark beer if you’d like. Any other stout or even a porter could be really delicious. But, seriously, why wouldn’t you want to use Guinness in this classic Irish Recipe?

Easy Instant Pot Irish Stew With Guinness
Get ready for this traditional Irish Stew made with Guinness. This is a quick and easy recipe to make in your Instant Pot. Perfect for a family dinner or a St. Patrick's Day Party. The meat comes out super tender and it tastes even better for leftovers the next day! #Irishstew #instantpot
Ingredients
- 6 bacon slices-cut up into small pieces
- 3 pounds of Stew Meat
- Flour-enough to coat meat.
- 1 can of Guinness
- 2 Tbsp Butter
- 2 cups of Beef Stock
- 2 Tbsp Worcestershire Sauce
- 2 Tbsp Brown Sugar
- 2 Cloves of Garlic
- 2 Tbsp Tomato Paste
- 1 Tbsp Thyme
- 1 Pound of Red Potatoes-Diced about 1 inch
- 1 Large Onion-Diced
- 4-5 carrots-peeled and cut into about 1 inch pieces
Instructions

Before beginning the cooking process, I like to cut up all my vegetables and measure out as many of my ingredients as possible. This makes the everything go a lot smoother.

First, push the Saute button on the Instant Pot. The pot will quickly heat up and you can just throw your bacon in there. Cook the bacon until it is nice and crispy. This gives your stew a great texture. Once the bacon is finished, take it out and put it into a bowl. Drain the grease out of the pan.

Next, fill a bowl up with your flour and coat your meat. Throw your butter into the pot and let it melt. Put the meat into the pan and brown each side. You will need to do this a couple times as the pot doesn’t have enough room to cook all of the meat at once. Once the meat is cooked, put it into a separate bowl.

Turn off the Instant Pot. Add your Guinness, Beef Stock, Tomato Paste, Worcestershire Sauce, Brown Sugar and Thyme. Stir all of this together. Next, add your beef, bacon and mix it all up. Finally, add the potatoes, onions, carrots and garlic. Mix well and close the lid of the Instant Pot.

Set the Instant Pot to cook for 25 minutes. Then let it naturally release the steam for about 15-20 minutes.

Add Salt and Pepper to taste. Serve with some really good, crust bread. Or soda bread to make it a really Irish meal.
Made this tonight for St.Patrick’s Day! My Irish husband gave it a thumbs up! Easy and very flavorful! I’m new to Instant Pot cooking, so this was an easy and delicious intro to Instant Pot cooking! I added a cornstarch/water slurry to thicken the stew, but other than that, I wouldn’t change a thing! Thanks so much!
