Now that the summer is almost over and fall weather is setting in, I am super excited about the start of football season. My whole family loves to spend as much time as we can on Saturday and Sunday watching both college and professional games. I value this family time and it’s a great opportunity for us all to hit the “pause” button and be together. One thing is for certain, we will definitely make some tasty dishes to eat while we watch the action on the field. So, I’m always looking for fun game day recipes to eat with my friends and family.
While my family doesn’t adhere to any specific diets, I feel that it is important to expose my children to as many different cuisines as possible. They have grown up in a “meat-eating” family, but I’ve had a lot of vegetarian and vegan friends that have introduced me to some delicious dishes that aren’t held back at all by their lack of meat. So, inspired by my friends, I thought I’d try out my own meatless recipe that would be perfect to eat while we are watching a football game. Introducing the Veggie “Chicken” Po’ Boy Sandwich.
What is a Po’ Boy Sandwich?
A Po’ Boy is a sandwich that originated in New Orleans. It generally consists of a baguette-style bread that holds a combination of meat and vegetables. A common version of this is a Shrimp Po’ Boy, but there are tons variations with lots of different meats including anything from roast beef to crawfish. But I wanted to create a version of this awesome sandwich that did not have any meat on it. This is where we introduce the star of the show, MorningStar Farms®!
MorningStar Farms® Popcorn Chik’n
I’ve tried some of MorningStar Farms® products in the past and have always been very impressed. They offer a wide variety of products that appeal to everyone no matter what their diet is. This is because their products aren’t just for vegetarians, they are for everyone. So, once I heard that they had some new products available at Walmart, I decided to take a look. And it was there, in the freezer aisle at Walmart, that I got my inspiration: the new MorningStar Farms® Popcorn Chik’n! A light bulb went on and the idea for a meatless Po’ Boy was born!
Veggie “Chicken” Po’ Boy Sandwich
The Popcorn Chik’n from MorningStar Farms® worked great for this recipe. Once I got them out of the oven, I was amazed at how crispy the were on the outside and how tender they were inside. They had a nice, seasoned taste that worked perfectly for my sandwich. They are also (I found this out because I kept popping them in my mouth as I was working) a great snack too. In fact there are a lot of different culinary roles for these little guys: make them into a wrap, put them on a salad or even create casserole with them! While I certainly recommend baking them in the oven, they are microwaveable too!
With the Popcorn Chik’n doing most of the work, the sandwich was super easy to make. I used a softer hoagie bun, but you could also use the traditional french baguette if you like that crispy crust (I don’t). Here is a list of the rest of the ingredients:
“Chicken” Po’ Boy Ingredients:
- 1 package of MorningStar Farms® Popcorn Chik’n
- Hoagie Bread (or french baguette)
- 1 head of Butter Lettuce
- 1 ripe Red Tomato
- 1/4 cup of Coleslaw (I used store-bought but you can make your own if you’d like).
- 2 tbsp Ranch Dressing
- Green Onions to taste
“Chicken” Po’ Boy Instructions
- Preheat oven and follow cooking instructions on the back of the box of MorningStar Farms® Popcorn Chik’n.
- Slice the roll to open it up like a sandwich.
- Place butter lettuce, tomato and then coleslaw on the bottom portion.
- Put 8-10 pieces of MorningStar Farms® Popcorn Chik’n on top of the vegetable.
- Drizzle the ranch dressing on top of the Chik’n
- Sprinkle with Green Onions
The result was delicious! I served it with my Panko Crusted Air Fryer Green Beans and it made an awesome meatless meal! Perfect for the Fall weather and for watching the big game on the weekends. I love being able to teach my kids that they don’t need to eat meat to have a satisfying, exciting and fulfilling meal! I’ll certainly head back to Walmart and try some of their other new products like the Italian Sausage Crumbles or their Cheezeburger Value Pack.
