I’m not sure when I discovered that I like spicy foods. I believe that it wasn’t until later in life. I remember going to a restaurant my Freshman year in college and ordering buffalo wings for the first time. I felt so adventurous! I think that this was the first time I ever tried Blue Cheese Dressing as well. I was crazy that day! I now have a 10-year-old nephew that can PUT DOWN some buffalo wings. Spicy food never even occurred to me when I was that age.
These days, I’ll eat just about anything spicy. I’ll even make non-spicy foods spicy. I love hot sauce on my eggs. Jalapenos on my burger? Yes please. I have a whole collection of boutique hot sauces. My wife bought me something called “Dragon Sauce” the other day and it is awesome.
Buffalo Chicken
While I will invite anything spicy on my plate, I have a special place in my heart for buffalo chicken. Sure, buffalo chicken wings are something that we are all aware of. But, buffalo chicken can come in lots of different ways besides being on a chicken bone. Obviously, there are buffalo chicken tenders. But I like to think we can expand it beyond some boneless, breaded chicken.
For instance, I’ve just come up with a really great recipe for Potato Skins with Buffalo Chicken. Potato Skins are another appetizer that everyone has had and they always seem to be about the same thing. Some bacon, cheese and maybe some sour cream and green onions. But this is another dish you can do a lot of other things with. So, I had the idea to make Buffalo Chicken Potato Skins. They turned out fantastic. I also made them in my air fryer, which gave them the perfect crisp on top. All you need to give these the kick they need is some shredded Buffalo Chicken.
Buffalo Chicken In An Instant Pot
Once you make some shredded Buffalo Chicken, you can use it to do so many things. You can make buffalo chicken sandwiches, buffalo chicken dip or even a buffalo chicken salad.
I like to make my Buffalo Chicken in my Instant Pot. If you haven’t tried out the Instant Pot yet, I highly suggest one. My wife and I got an Instant Pot about two years ago and it has completely changed the way that we cook food. The Instant Pot is a pressure cooker that can cook your food by using highly pressurized air that seals in flavor and cooks food quickly and thoroughly. The food comes out perfectly cooked and super tender. You can make anything in an Instant Pot, from soups, to dinners to even yogurts and desserts. So I thought it was well worth my time to try out a new Buffalo Chicken Instant Pot Recipe.
Instant Pot Buffalo Chicken Recipe
The recipe for Buffalo Chicken in and Instant Pot is pretty easy. You probably already have these ingredients in your kitchen.
Buffalo Chicken Instant Pot Ingredients:
- 2 large boneless chicken breasts
- 1 tablespoon olive oil
- 1 tablespoon sea salt
- 1 small yellow onion, chopped
- 1 tablespoon minced garlic
- 2 cups chicken broth
- 1/4 cup hot sauce
Buffalo Chicken Instant Pot Instructions:
- Turn on sauté function on your Instant Pot.
- Add and heat the olive oil. Add the onion, salt and garlic. Stirring often, cook 2-3 minutes, or until translucent.
- Add your chicken and cook 2-3 minutes or until brown on both sides.
- Add chicken broth and hot sauce and stir.
- Lock the lid on your Instant Pot and set to high pressure and cook for 15 minutes. Release pressure naturally for 10 minutes and release remaining pressure.
- Shred chicken with a fork. Drain sauce and set aside.

Ingredients
