There seems to be no end to the awesome Air Fryer Recipes that I’ve discovered since I got this cool kitchen appliance. I love how they can take decadent recipes and make them healthy, or they can take healthy recipes and make them super tasty!
Air Fryers are especially awesome if you are a vegetarian. There are so many great meatless recipe that come out so delicious in your Air Fryer. One of my most popular recipes are these Air Fryer Zucchini Chips. I’ve also made a recipe for Air Fryer Eggplant Fries. The eggplant came out so delicious, that I started wondering what else I could make in my Air Fryer. So today, we’d like to share this recipe for Air Fryer Eggplant Parmesan!
Air Fryer Eggplant Parmesan
Eggplant Parmesan has often been billed as a lighter, vegetarian friendly version of the classic Italian Dish, Chicken Parmesan. The only problem is that both of these recipes are traditionally fried in a whole bunch of oil! That’s how they get that nice, crispy parmesan crust on the outside!
What is awesome about the Air Fryer is that you can still get that crust on the outside and use only a fraction of the oil! All the flavor, none of the guilt!
Ready to get started? Here is what you’ll need:
- 1/2 cup Italian style bread crumbs
- 1/4 cup grated Parmesan cheese
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1/4 teaspoon ground pepper
- 1/2 cup flour
- 2 eggs
- 1 eggplant, cut into 1/2″ rounds
- 2 cups pasta sauce
- 8 slices mozzarella cheese
- chopped fresh parsley, optional for garnish
Air Fryer Eggplant Parmesan Tips and Suggestions
- You can make this Air Fryer Eggplant Parmesan gluten free by subbing in gluten free bread crumbs.
- If you’ve ever made something with an egg wash, you know it can get pretty messy. The best thing to do is to use a fork or a toothpick to pick up the eggplant with and dip it in the egg, flour and breadcrumbs.
- Use a ripe, organic Eggplant for this recipe. It really DOES matter. You know that an eggplant is ripe if it’s dark purple in color and pretty heavy.
- This recipe stays good in the fridge for about 3 days. It’s great as a breakfast on top of some eggs!
- To reheat, simple preheat your Air Fryer to 350 and cook for 3 minutes. If it still needs more time, heat some more at 3 minute increments.

Air Fryer Eggplant Parmesan
Ingredients
- 1/2 cup Italian style bread crumbs
- 1/4 cup grated Parmesan cheese
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1/4 teaspoon ground pepper
- 1/2 cup flour
- 2 eggs
- 1 eggplant cut into 1/2" rounds
- 2 cups pasta sauce
- 8 slices mozzarella cheese
- chopped fresh parsley optional for garnish
Instructions

Add bread crumbs, cheese, seasoning, salt, garlic powder and pepper in a shallow bowl and mix well. In a separate shallow bowl, add flour. In a third shallow bowl, beat two eggs.

Cut Eggplant into thick slices.

Dredge eggplant in flour, coating both sides, coat in egg and follow with bread crumbs, coating both sides.

Preheat air fryer to 370 for 5 minutes. Coat basket with nonstick cooking spray and place eggplant in basket. Heat for 8 minutes, flipping halfway through cooking.

Top with a large dollop of sauce and slice of mozzarella cheese. Heat for 1 minute or until cheese is melted.

Sprinkle with chopped fresh parsley if desired and serve immediately.
